A beautiful, basic sauce made for us in Tuscany by a hands-on, small batch producer. "Marinara" is Italian for mariner, so the classic combination is spaghetti with shellfish and other seafood. You can also use it as a base for a quick Bolognese sauce by simmering with minced pancetta, cooked ground meat, and a touch of cream.
