Westcombe is a real find ... an artisan-made Cheddar made by the Calver family in Somerset County, England. Westcombe has a slightly grainy texture with small random veins of flavor-enriching blue mold. The taste is both buttery and sharp, with nuances of walnut. The length of flavor is incredible based on what we normally think of as Cheddar. It is good grated over veggies, soup, pasta, or when drizzled with chutney or honey. But best of all, let it come to room temperature, break into chunks, pour a tall glass of English ale, and enjoy with a mate.
