The wheels are aged for up to a year in special rooms which were constructed to simulate the ancient caves in Roquefort, France. Humboldt Fog is a great-tasting goat cheese! Very creamy, light but earthy, getting more complex with age. The center layer of ash adds more flavor to this already wonderful cheese! Cabot Clothbound is a traditional clothbound Cheddar made in the English style. Rarely is bandage-wrapped Cheddar produced in America capable of challenging the best Cheddar in England, but this one fills the bill. We’ll pair these cheeses with Rustic Country Bread, a light airy bread, with a thin crust. Excellent for tearing and eating by the piece.
