These chocolate bars are named after the state of Santander, in eastern Colombia, and are the only single-origin chocolate produced in Colombia. The terrain of the Andean mountains of Yariguies produces Colombia's best cacao. The unique cacao taste is the result of the region's one-of-a-kind georgraphical and agricultural conditions. The same traditon of harvesting the cacao has been carried on for centuries: the colorful cacao pods are hand harvested with scissors and forks, split open with short machetes, fermented in wooden boxes, then dried in the sun.
In their February 2006 edition, Gourmet magazine rated several gourmet 70% cacao chocolate bars. Santander dark chocolate came in second place! This chocolate has exquisite flavor and texture. When you bite into it, the taste of pure dark chocolate permeates your mouth.
