A great deal of care and dedication goes into creating the world’s best cheeses; a prime example of this dedication comes through in Cabot’s Clothbound Cheddar. This wonderfully sharp, firm Cheddar comes from the collaboration between two of Vermont’s cheese makers, Cabot Creamery and Jasper Hill Farm. The process of cave-aging and being wrapped in layers of cloth allows the cheese to develop a deep, concentrated flavor. In 2006 it was awarded the title of “Best of Show” at the Annual Conference and Competition of the American Cheese Society, and has been winning over crowds across the U.S. ever since.
