We bake this wonderful bread daily in our bakeries using sprouted organic wheat grain. It is hearty and delicious, and has great health benefits over breads baked with conventional flour. When whole grains are sprouted they convert into a living food, bursting with more vital nutrients than unsprouted grains. Sprouted whole grains digest in the body like vegetables and not as starches. The sprouting process neutralizes complex sugars responsible for indigestion and produces enzymes that aid in digestion. Processed white flour made from wheat grain is devoid of many nutrients and fiber necessary for a healthy diet. Sprouted whole grains allow all of the nutrients to be absorbed by the body.

Cave-Aged Emmental comes from the Emmen Valley in Switzerland and has a mild, nutty, fruity flavor. Crucolo is an artisanal cheese from the Trentino region in northern Italy. This soft cheese is aged for over 60 days in the cellars of Rifugio Crucolo, at the entrance of Val Campelle, Trento. This unique environment gives the cheese its particular taste and rich aroma. Comté St. Antoine, from the Jura region of the French Alps, this Gruyère-style cheese is arguably the most famous Comté. Made of raw cow’s milk, the firm and supple texture of this cheese melts in your mouth, leaving you with flavors that range from dense and smoky to sweet and fruity.
